mirin

Type of sake that is used to give certain Japanese prepared foods a mildly sweet flavor. Mirin is made by mixing glutinous rice and malted rice with distilled liquor. The mixture is aged for several months and then strained. (adapted from Japan: An Illustrated Encyclopedia. Tokyo: Kodansha, 1993)
